There are all sorts of ways couples are incorporating sweets and treats into their wedding reception. Well, here is one s’more suggestion. Get it? North Mallow & Co brings a new twist to everyone’s favorite campfire classic with homemade flavors like chocolate chip and mocha, and the best part? You get to roast and build them yourself! Mike, the brains behind the sweet operation, is incredibly passionate and creative as well, so there’s no telling what he’ll concoct next. It was such a treat (too much with the puns, guys?) working with Mike at The Big Fake Wedding Minneapolis-St.Paul, and we’re pumped to share more about him today!
“Mike knocked it out of the park with his s’mores bar. We’re talking homemade marshmallows with flavors like chocolate chip, caramel and vanilla bean! His super unique set up and dessert bar was a fun conversation piece, and an even more delicious treat for our guests. Thanks Mike!”

Tell us a little bit about the story of North Mallow & Co.
North Mallow & Co launched in 2013 with our s’more bar catering business. The s’more has been made time and time again – so we decided to bring a new twist to this classic favorite. Our s’more bar allows guests to roast their own s’more and select from a variety of flavors of our homemade, all-natural marshmallows. We make our mallows with high quality ingredients such as whole vanilla beans, homemade caramel, brewed espresso, and agave nectar. Each batch of mallows is locally crafted in Minneapolis, Minnesota. Our brides and grooms have loved having our s’mores as the featured dessert or a late night snack at their weddings. The excitement the s’more bar experience brings to the newlywed couple and their guests is what we love most about catering weddings!
Who’s your biggest fan and why?
One of my biggest fans is my uncle, Doug. He is a successful entrepreneur that has started many companies. His advice has been so valuable as I started North Mallow & Co. Doug continues to this day to ask the tough questions a young entrepreneur needs to be asked and continues to be my biggest fan and mentor. He taught me everything I know about entrepreneurship and inspires me to be a better entrepreneur, always keeping in mind his endless drive and motivation.
Describe a highlight or pivotal moment in your career.
One of the highlights in my career was after Minnesota became the 12th state to legalize same-sex marriage in Summer 2013. I was honored to have North Mallow & Co in a featured article in the Fall 2013 Wedding Edition of Lavender Magazine, an award-winning Minnesota LGBT publication. Being able to show my support and provide our s’mores bar for same-sex couples as they planned the wedding of their dreams was milestone in my career. One of my favorite weddings that I have catered was my first gay wedding at a beautiful barn venue in Red Wing, Minnesota. The couple’s love and happiness was simply contagious.
What advice would you give to aspiring small business owners?
A favorite of piece of advice that I received early in my career was to keep an open mind and continue to evolve your business to meet the needs of your customer. By listening to my customers from a separate business, North Mallow & Co was created to bring the joy of gourmet s’mores to weddings, corporate events, and parties.
What is your favorite part of The Big Fake Wedding experience?
The Big Fake Wedding is the perfect opportunity for guests to see vendors in action. At North Mallow & Co, our s’more bar is more than just a dessert. It’s a one-of-a-kind experience to share with your guests. We loved being able to share this experience with The Big Fake Wedding event attendees!
