Penelope Pfuntner of Chef Penelope’s Catering knows that the way to the heart is through the stomach. Chef Penelope and her incredible team know how to make your special day that much more spectacular – by showing love through delectable creations and it was a (delicious!) honor to work with them on the 2nd Nashville NotWedding earlier this year. What is the best part about your job?
We love being caterers! I believe the best part is becoming part of someones special day, and all the excitement of helping them create and execute the perfect menu. We are ridiculously blessed to get to do this every weekend.

What is the biggest risk you’ve ever taken?
I opened a restaurant in the last economic fall in 2007. eek…The Pfunky Griddle was and is so great, but I had to give it to my oldest son. I just couldn’t tear myself away from catering. We would be maxed out at the restaurant and I would be like, “See ya! I’m going to go do a wedding!”

They say that food is love. What is your idea of comfort food?
Ahhh…Homemade spaghetti with sauce that has cooked for hours and a nice salad. Perfection!

Tell us about your best (and easiest!) go-to recipe. And do you mind sharing your recipe?
OOO…yummy tomato & peach salad. It’s just fresh heirloom tomato wedges, peach wedges, and red onion slices, drizzled with harvest riesling vinegar and olive oil. Seasoned with sugar, salt and pepper. Light, beautiful and delicious! Serve this with a beautifully grilled chicken breast or a slice of roasted pork or just eat it by itself for a light supper.

What is your favorite part of The NotWedding experience?
We just loved being part of The NotWedding. I really loved how we got to interact with the guest (of course at events, we are intentionally invisible). We met so many wonderful couples and the other vendors were top notch. Just a great, great evening.
